  • 2 lbs beef chuck, cubed
  • 1 cup orzo pasta
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 tbsp tomato paste
  • 1 tsp ground cinnamon
  • 4 cups beef broth
  • 1 can (15oz) crushed tomatoes
  • 2 tbsp olive oil
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Brown beef chunks in olive oil over medium-high heat until seared.
  2. Add onions and carrots, sautéing until softened.
  3. Stir in tomato paste and cinnamon, cooking for 1-2 minutes.
  4. Add beef broth and crushed tomatoes; bring to a boil, then reduce to a low simmer.
  5. Cover and cook for 2-2.5 hours until beef is tender.
  6. Stir in dry orzo and simmer for another 10-12 minutes until pasta is cooked through.
  7. Remove from heat, let rest for 5 minutes, and garnish with parsley.
