Description

Ingredients

  • 4 ounces salami, sliced into bite-sized pieces
  • 4 ounces pepperoni, sliced into bite-sized pieces
  • 6 ounces provolone cheese, cubed
  • 1 cup Kalamata olives, pitted
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1 small red onion, thinly sliced
  • ½ cup olive oil
  • ¼ cup red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Prepare all ingredients by slicing the salami and pepperoni, cubing the provolone cheese, halving the cherry tomatoes, dicing the cucumber, and thinly slicing the red onion.
  2. In a large mixing bowl, combine all prepared ingredients along with the olives.
  3. In a separate bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper. Pour the dressing over the salad mixture and toss gently until evenly coated.
  4. For enhanced flavor, cover and refrigerate for at least 30 minutes before serving.
