- 6 cups cubed seedless watermelon (chilled)
- 1/2 cup crumbled feta cheese
- 1/4 cup fresh mint leaves, torn
- 2 tablespoons extra virgin olive oil
- 1 tablespoon fresh lime juice
- Pinch of flaky sea salt
Instructions
- Cut chilled watermelon into 1-inch cubes.
- Whisk together olive oil and lime juice in a small bowl.
- Place watermelon cubes on a chilled platter.
- Sprinkle crumbled feta over the watermelon.
- Scatter torn mint leaves over the top.
- Drizzle with the lime vinaigrette and finish with flaky sea salt.
