- 6 cups Romaine lettuce, finely chopped
- 6 oz Salami, finely diced
- 6 oz Provolone cheese, finely diced
- 1/2 cup Red onion, finely diced
- 1 can (15oz) Chickpeas, drained and rinsed
- 1/3 cup Extra virgin olive oil
- 3 tbsp Red wine vinegar
- 1 tsp Dried oregano
- Salt and black pepper to taste
- 1/4 cup Fresh parsley, chopped
Instructions
- Whisk together olive oil, red wine vinegar, oregano, salt, and pepper in a bowl.
- Finely chop the romaine lettuce into small, uniform pieces.
- Dice the salami and provolone cheese into small cubes.
- Finely chop the red onion.
- Combine lettuce, salami, cheese, onion, and chickpeas in a large bowl.
- Pour the dressing over the salad and toss gently to coat.
- Garnish with fresh parsley and serve immediately.
