A rich and creamy potato salad featuring a balanced blend of tangy mustard and smooth mayonnaise, designed to be the centerpiece of any summer gathering.

- 2 lbs Yukon Gold potatoes, cubed
- 1/2 cup mayonnaise
- 2 tbsp yellow mustard
- 2 tbsp apple cider vinegar
- 1/2 cup red onion, finely diced
- 2 stalks celery, chopped
- Salt and black pepper to taste
Instructions
- Place cubed potatoes in a pot of cold salted water and bring to a boil.
- Simmer until tender (about 15-20 minutes), then drain.
- While warm, toss potatoes with apple cider vinegar.
- Whisk mayonnaise and mustard in a large bowl.
- Stir in diced onions and chopped celery.
- Gently fold in the cooled potatoes until coated.
- Season with salt and pepper and chill for 2 hours.
