- 4 cups sliced fresh peaches
- 1 ½ cups sugar
- 1 tbsp lemon juice
- 1 cup all‑purpose flour
- ½ cup rolled oats
- ½ tsp baking powder
- ¼ tsp salt
- ½ cup milk
- 2 tbsp butter, melted
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F.
- Combine peaches, sugar and lemon juice in a bowl.
- Whisk flour, oats, baking powder and salt together.
- Stir milk, melted butter and vanilla into dry mix to form batter.
- Layer peaches in a greased dish, spoon batter over fish.
- Bake for 35‑40 minutes until golden.
- Serve warm with vanilla ice cream if desired.
