- 1 lb sirloin steak, cut into 1.5‑inch cubes
- 1 cup halved Kalamata olives
- 1 red onion, sliced into rings
- 1 cup cherry tomatoes
- 1 medium zucchini, sliced into thick rounds
- 1 bell pepper, sliced into strips
- 2 tbsp extra‑virgin olive oil
- 1/4 cup freshly squeezed lemon juice
- 3 garlic cloves, minced
- 1 tsp dried oregano, plus extra for garnish
- Salt and pepper to taste
Instructions
- Preheat grill to medium‑high (about 450°F).
- Marinate beef cubes with olive oil, lemon juice, garlic, oregano, salt and pepper for 15–30 minutes.
- Thread meat and vegetables alternately onto skewers.
- Grill for 10–12 minutes, turning every 3–4 minutes.
- Remove and let rest a few minutes before serving.
- Garnish with fresh oregano and a squeeze of lemon.
