  • 4 bone-in pork chops (about 1 inch thick)
  • 2 cups well-drained sauerkraut
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 medium yellow onion, finely chopped
  • 1 tsp garlic powder
  • 1 tsp freshly ground black pepper
  • 1 cup seasoned breadcrumbs
  • 2 tbsp melted butter

Instructions

  1. Preheat your oven to 350°F (175°C) and spray a baking dish with nonstick cooking spray.
  2. Season pork chops with salt and pepper, then sear in a skillet over medium-high heat for 3-4 minutes per side until golden brown.
  3. In a bowl, mix sauerkraut, onion, cream of mushroom soup, and garlic powder until well combined.
  4. Spread half of the sauerkraut mixture in the baking dish. Layer seared pork chops on top and add the remaining sauerkraut mixture.
  5. Combine breadcrumbs with melted butter; sprinkle evenly over the casserole.
  6. Cover with foil and bake for 30 minutes. Remove foil for the last 10 minutes to brown the topping.
