Description

A vibrant fusion bowl featuring charred Mexican street corn, juicy grilled chicken, and fluffy rice, all tied together with a tangy lime and Cotija cream sauce.


Ingredients

  • 2 large chicken breasts, cubed
  • 2 cups corn (frozen or fresh)
  • 1/4 cup mayonnaise
  • 1 tablespoon lime juice
  • 1/2 cup crumbled Cotija cheese
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • Fresh cilantro, chopped
  • 4 cups cooked white rice
  • Salt and pepper to taste

Instructions

  1. Season chicken with chili powder, paprika, salt, and pepper.
  2. Sear chicken in a hot skillet until golden and cooked through (165°F). Remove and rest.
  3. In the same pan, sauté corn on high heat until charred and blackened in spots.
  4. In a bowl, mix mayonnaise and lime juice until smooth.
