  • 4 boneless, skinless chicken breasts
  • 1 cup fresh apple cider
  • 1/4 cup pure honey
  • 2 tsp fresh thyme, chopped
  • 1/2 head green cabbage, shredded
  • 1/2 head purple cabbage, shredded
  • 1 cup grated carrots
  • 2 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
  2. Season chicken breasts with salt and pepper and place in the baking dish.
  3. In a bowl, whisk together apple cider, honey, balsamic vinegar, and thyme. Pour over the chicken.
  4. Bake for 25-30 minutes until the internal temperature reaches 165°F (75°C).
  5. Meanwhile, combine shredded cabbage and grated carrots in a bowl. Drizzle with olive oil and season lightly with salt.
