  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup apple cider
  • 1/2 cup brown sugar
  • 2 tsp fresh thyme
  • 2 cups shredded red cabbage
  • 1 cup grated carrots
  • 1 cup apple slices
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. Season chicken breasts with salt and pepper, then place them in the baking dish.
  3. In a saucepan over medium heat, combine apple cider, brown sugar, and thyme; simmer until the sugar dissolves.
  4. Pour half of the glaze over the chicken, coating well.
  5. Bake for 25-30 minutes or until chicken reaches an internal temperature of 165°F (74°C), basting occasionally.
  6. While chicken bakes, mix cabbage, carrots, and apple slices in a bowl; drizzle with olive oil and season with salt and pepper.
