Description

A fresh and vibrant Hawaiian-inspired poke bowl combining spicy tuna with sweet mango and crunchy cucumber over a bed of fluffy sushi rice.


Ingredients

  • 1 lb sashimi-grade tuna
  • 1 ripe mango, diced
  • 1 English cucumber, sliced
  • 1/4 cup Kewpie mayonnaise
  • 2 tbsp sriracha
  • 1 tbsp lime juice
  • 2 cups cooked sushi rice
  • 1 tbsp sesame seeds
  • 2 green onions, sliced

Instructions

  1. Cook sushi rice according to package instructions and let cool.
  2. Dice sashimi-grade tuna into 1/2 inch cubes.
  3. Whisk together Kewpie mayo, sriracha, and lime juice in a bowl.
  4. Gently fold the tuna cubes into the spicy mayo until coated.
  5. Dice the mango and slice the cucumber into half-moons.
  6. Scoop rice into bowls and top with tuna, mango, and cucumber.
  7. Garnish with sesame seeds and sliced green onions.
