- 1 lb sashimi-grade tuna
- 1 ripe mango, diced
- 1 English cucumber, sliced
- 1/4 cup Kewpie mayonnaise
- 2 tbsp sriracha
- 1 tbsp lime juice
- 2 cups cooked sushi rice
- 1 tbsp sesame seeds
- 2 green onions, sliced
Instructions
- Cook sushi rice according to package instructions and let cool.
- Dice sashimi-grade tuna into 1/2 inch cubes.
- Whisk together Kewpie mayo, sriracha, and lime juice in a bowl.
- Gently fold the tuna cubes into the spicy mayo until coated.
- Dice the mango and slice the cucumber into half-moons.
- Scoop rice into bowls and top with tuna, mango, and cucumber.
- Garnish with sesame seeds and sliced green onions.
