Tender, spice-rubbed lamb chops seared to perfection and topped with a bright, nutty mint and pistachio pesto.
Ingredients

- 8 lamb loin chops
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup fresh mint leaves
- 1/3 cup shelled pistachios
- 1/4 cup extra virgin olive oil
- 1 tbsp lemon juice
- 1 clove garlic, minced
Instructions
- Rub lamb chops with cumin, paprika, salt, and pepper.
- Blend mint, pistachios, olive oil, lemon juice, and garlic in a processor until coarse-smooth.
- Heat oil in a large skillet over medium-high heat.
- Sear chops for 3-4 minutes per side until golden brown.
- Remove from heat and let rest for 5 minutes.
- Top each chop with a spoonful of mint pistachio pesto.
