- 2 lbs Beef Chuck Roast, cubed into 1-inch pieces
- 1.5 lbs Yellow Potatoes, cubed into 1-inch pieces
- 1/2 cup Unsalted Butter, melted
- 6 cloves Garlic, minced
- 1/2 cup Beef Broth
- 2 tbsp Worcestershire Sauce
- 1 tsp Salt
- 1/2 tsp Black Pepper
- 2 tbsp Vegetable Oil (for searing)
Instructions
- Sear beef cubes in oil over high heat until browned on all sides; transfer to slow cooker.
- Add cubed potatoes to the slow cooker with the beef.
- In a bowl, whisk together melted butter, minced garlic, beef broth, and Worcestershire sauce.
- Pour the garlic butter mixture over the beef and potatoes, stirring gently to coat.
- Season with salt and pepper.
- Cover and cook on LOW for 7-8 hours until beef is fork-tender.
- Garnish with fresh parsley before serving.
