Description

A zesty, tender, and flavor-packed shredded chicken dish made entirely in the slow cooker. Perfect for tacos, bowls, and easy weeknight meal prep.


Ingredients

  • 1.5 lbs boneless skinless chicken breasts
  • 1 cup chunky salsa
  • 1 packet (1 oz) taco seasoning
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen corn
  • 1 tablespoon fresh lime juice
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Place chicken breasts in the bottom of a greased slow cooker.
  2. Sprinkle taco seasoning over the chicken and pour the salsa on top.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours until chicken is tender.
  4. Remove chicken to a bowl and shred using two forks.
  5. Stir shredded chicken back into the slow cooker with drained black beans and corn.
  6. Stir in lime juice and fresh cilantro just before serving.
