A succulent, slow-cooked beef roast glazed in a rich reduction of balsamic vinegar, brown sugar, and garlic.

- 3 lb Beef Chuck Roast
- 1/2 cup Balsamic Vinegar of Modena
- 1/3 cup Brown Sugar
- 4 cloves Garlic, minced
- 1 cup Beef Broth
- 1 tbsp Olive Oil
- Salt and Pepper to taste
Instructions
- Season beef with salt and pepper; sear in olive oil until browned on all sides.
- Place seared beef into the slow cooker.
- Whisk balsamic vinegar, brown sugar, and garlic together in a bowl.
- Pour the balsamic mixture over the beef.
- Pour beef broth into the bottom of the pot.
- Cover and cook on Low for 8 hours.
- Remove beef, strain liquid into a pan, and boil until thickened.
- Shred beef and return to the glaze.
