  • 1 can (13.5 oz) full-fat coconut milk
  • 3 tbsp red curry paste
  • 2 stalks fresh lemongrass
  • 1 cup fresh basil leaves
  • 1 cup bell peppers, chopped (any color)
  • 2 cups fresh spinach
  • 2 tbsp lime juice
  • 1 tablespoon oil (for cooking)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, minced

Instructions

  1. Prepare your ingredients by chopping vegetables and rinsing fish fillets.
  2. In a large pan over medium heat, heat oil and sauté onions until translucent. Add garlic and ginger; cook until fragrant.
  3. Stir in red curry paste; cook for about two minutes.
