  • 1 (4-6 lb) Prime Rib Roast (bone-in or boneless)
  • 2 tbsp Fresh Rosemary, finely chopped
  • 2 tbsp Fresh Thyme, finely chopped
  • 6 Garlic Cloves, minced
  • 1/4 cup Extra Virgin Olive Oil
  • 2 tsp Kosher Salt
  • 1 tsp Freshly Cracked Black Pepper

Instructions

  1. Preheat your oven to 450°F (232°C).
  2. In a bowl, combine rosemary, thyme, garlic, olive oil, salt, and pepper to create a herb rub.
  3. Pat the prime rib dry with paper towels and apply the herb mixture evenly over the roast.
  4. Place the seasoned prime rib on a roasting rack in a baking pan and roast for 20 minutes.
  5. Reduce the oven temperature to 325°F (163°C) and continue roasting until an internal temperature of 130°F (54°C) is reached for medium-rare (about 1.5 hours).
  6. Remove from the oven and let rest for at least 20 minutes before slicing.
