- 1 lb ground turkey
- 2 medium zucchinis, sliced into half-moons
- 12 oz pasta of choice
- 3 cloves garlic, minced
- 1 small onion, diced
- 2 tbsp olive oil
- Salt and black pepper to taste
- Fresh parsley for garnish
- 1 tbsp lemon juice
Instructions
- Boil pasta in salted water until al dente; reserve 1/2 cup pasta water before draining.
- Heat olive oil in a large skillet over medium-high heat.
- Add ground turkey and cook until browned, breaking it apart with a spoon.
- Stir in diced onions and minced garlic; cook until softened.
- Add zucchini slices and sauté for 3-5 minutes until tender-crisp.
- Stir in the cooked pasta and reserved pasta water, tossing until well coated.
- Remove from heat, stir in lemon juice, and garnish with parsley.
