  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • ¾ cup granulated sugar
  • 3 large eggs
  • ½ cup sour cream
  • 1 cup fresh raspberries (plus extra for garnish)

Instructions

  1. Preheat your oven to 325°F (160°C) and lightly grease a baking pan or line it with parchment paper.
  2. In a food processor, pulse the graham crackers into fine crumbs, mix in the melted butter until combined, and press firmly into the bottom of the prepared pan.
  3. In a mixing bowl, beat the cream cheese until smooth; gradually add sugar and beat until fluffy. Add eggs one at a time, mixing thoroughly after each addition.
  4. Fold in the sour cream and half of the raspberries gently into the mixture.
  5. Pour the cheesecake filling over the crust and bake for about 25-30 minutes or until slightly jiggly in the center. Cool completely before refrigerating for at least 4 hours or overnight.
  6. Cut into heart shapes using cookie cutters and garnish with remaining fresh raspberries before serving.
