- 2 cups sparkling water (optional)
Instructions
- Chop peaches into small cubes, reserving skins for garnish.
- Pulse peaches, peeled lemons, and honey in a blender until thick puree forms.
- Add a splash of cold water and blend until silky smooth.
- Pour mixture through a fine sieve into a pitcher, pressing pulp to extract liquid.
- Stir in remaining water and pinch of sea salt, then mix gently.
- Serve over ice, garnish with mint leaves and a lemon wheel, then chill briefly.
