- 1 cup fresh pineapple, diced or sliced
- 2 tablespoons taco seasoning
- 2 tablespoons olive oil
- Juice of 1 lime
- 8 corn or flour tortillas
- 1/4 cup diced onions
- 1/4 cup chopped fresh cilantro
- 1 avocado, sliced
- Lime wedges for serving
Instructions
- Marinate the chicken by mixing taco seasoning, olive oil, and lime juice in a bowl. Coat the chicken thoroughly and let it marinate for at least 30 minutes.
- Prepare the pineapple by cutting it into rings or chunks.
- Heat a large skillet over medium-high heat with a splash of oil. Add the marinated chicken and cook for about 6-7 minutes on each side until golden brown (internal temperature should reach 165°F).
- When the chicken is nearly done, add the pineapple to the skillet and sauté for about 3-4 minutes until caramelized.
- Tear or slice the cooked chicken and warm tortillas in a separate pan or microwave.
