- 1 can tuna in olive oil
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, julienned
- 1/4 cup red onion, thinly sliced
- 1/4 cup kalamata olives, sliced
- 1 tablespoon fresh lemon juice
- 2 teaspoons extra‑virgin olive oil
- 1 teaspoon red wine vinegar
- 1 teaspoon dried oregano
- Salt and pepper, to taste
Instructions
- Drain tuna, reserving a splash of oil.
- Wring cucumber, halve tomatoes, slice onion and olives.
- Whisk oil, lemon juice, vinegar, oregano, salt, pepper.
- Combine tuna and vegetables in a bowl.
- Pour dressing over, toss gently.
- Serve immediately or chill until ready.
