Description

A bright, Mediterranean-inspired tuna salad featuring fresh cucumbers, cherry tomatoes, olives, and a tangy lemon vinaigrette. Packed with protein, fiber, and healthy fats for a quick, satisfying meal.


Ingredients

  • 1 can tuna in olive oil
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, julienned
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup kalamata olives, sliced
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons extra‑virgin olive oil
  • 1 teaspoon red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste

Instructions

  1. Drain tuna, reserving a splash of oil.
  2. Wring cucumber, halve tomatoes, slice onion and olives.
  3. Whisk oil, lemon juice, vinegar, oregano, salt, pepper.
  4. Combine tuna and vegetables in a bowl.
  5. Pour dressing over, toss gently.
  6. Serve immediately or chill until ready.
