Description

A healthy and vibrant one-pan meal featuring salmon fillets glazed in a sweet and tangy maple-dijon sauce, roasted alongside seasonal vegetables.


Ingredients

  • 4 salmon fillets (6oz each)
  • 1/4 cup pure maple syrup
  • 2 tbsp Dijon mustard
  • 2 cloves garlic, minced
  • 1 lb asparagus or broccoli florets
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. In a small bowl, whisk together maple syrup, Dijon mustard, minced garlic, salt, and pepper until smooth.
  3. Toss your vegetables with olive oil and salt, then spread them around the edges of the prepared baking sheet.
  4. Place salmon fillets in the center of the pan, skin-side down.
  5. Spoon the maple-dijon glaze evenly over the top of each salmon fillet.
  6. Bake for 12-15 minutes, or until the salmon flakes easily and the vegetables are tender.
  7. Drizzle with fresh lemon juice and garnish with parsley before serving.
