A healthy and vibrant one-pan meal featuring salmon fillets glazed in a sweet and tangy maple-dijon sauce, roasted alongside seasonal vegetables.

- 4 salmon fillets (6oz each)
- 1/4 cup pure maple syrup
- 2 tbsp Dijon mustard
- 2 cloves garlic, minced
- 1 lb asparagus or broccoli florets
- 2 tbsp olive oil
- 1 tbsp lemon juice
- Salt and black pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- In a small bowl, whisk together maple syrup, Dijon mustard, minced garlic, salt, and pepper until smooth.
- Toss your vegetables with olive oil and salt, then spread them around the edges of the prepared baking sheet.
- Place salmon fillets in the center of the pan, skin-side down.
- Spoon the maple-dijon glaze evenly over the top of each salmon fillet.
- Bake for 12-15 minutes, or until the salmon flakes easily and the vegetables are tender.
- Drizzle with fresh lemon juice and garnish with parsley before serving.
