Ingredients

Scale
  • 1 lb ground turkey
  • 1/2 cup breadcrumbs
  • 1/3 cup grated Parmesan cheese
  • 1/4 cup finely chopped onion
  • 2 cloves minced garlic
  • 1 tablespoon fresh sage, chopped (plus extra for garnish)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup pumpkin puree
  • 1/2 cup vegetable broth (or cream for richness)
  • 2 tablespoons olive oil

  2. Form small meatballs (about 1-1½ inches) and place them on a parchment-lined baking sheet.
  3. Bake meatballs for 20-25 minutes until golden brown and cooked through.
  4. While meatballs bake, heat olive oil in a skillet over medium heat. Add remaining garlic and sage; sauté for 1 minute until fragrant.

  6. Add baked meatballs to the skillet and toss gently to coat with sauce before serving.
