  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 1 cup full-fat sour cream
  • 2 cups shredded cheese (cheddar and Monterey Jack blend)
  • 8 corn or flour tortillas
  • 4 green onions, chopped
  • 2 cups enchilada sauce (store-bought or homemade)
  • 1 tsp garlic powder
  • 1 tbsp olive oil

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. In a skillet, heat olive oil and cook chicken until golden brown on both sides, about 7-8 minutes per side. Shred the chicken once cooled.
  3. In a bowl, mix shredded chicken with sour cream, half of the cheese, green onions, garlic powder, and some enchilada sauce until well combined.
  4. Fill each tortilla with the mixture, roll tightly, and place seam-side down in the baking dish.
