Description

Ingredients

  • 1 cup graham cracker crumbs
  • 4 tbsp unsalted butter (melted)
  • 16 oz cream cheese (softened)
  • 1/2 cup sour cream
  • 3/4 cup granulated sugar
  • 1/4 cup fresh mint leaves (finely chopped)
  • 2 tsp vanilla extract
  • 2 large eggs

Instructions

  1. Preheat oven to 325°F (163°C). Line a muffin tin with paper liners or grease with nonstick spray.
  2. In a medium bowl, combine graham cracker crumbs and melted butter. Press into the bottom of each muffin cup and bake for 8-10 minutes until golden brown.
  3. In a large bowl, beat softened cream cheese, sugar, sour cream, vanilla, and mint until smooth.
  4. Add eggs one at a time, mixing on low speed until just incorporated.
  5. Fill muffin cups about three-quarters full with the cheesecake mixture.
  6. Bake for 18-20 minutes until set but slightly jiggly in the center. Turn off the oven and let cool in the oven for an hour before refrigerating.
