- 2 lbs pork shoulder
- 2 tbsp olive oil
- 1 medium yellow onion
- 3 cloves garlic
- 1 red bell pepper
- 2 chipotle peppers in adobo
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 can diced tomatoes (14.5 oz)
- 1 can kidney beans (15 oz)
- 1 cup beef broth
- salt & pepper to taste

- optional lime wedges
Instructions
- Set Instant Pot to sauté and brown pork cubes; set aside.
- Sauté onion, garlic, and bell pepper until softened.
- Add chipotle, cumin, smoked paprika, tomatoes, and beans; stir.
- Add beef broth, return pork, seal lid, cook High Pressure for 25 minutes.
- Quick release pressure, season, and garnish with cilantro and lime.
- Serve hot.
