- 4 cups baby spinach
- 2 Honeycrisp apples, sliced
- 1/2 cup crumbled feta cheese
- 1/3 cup candied walnuts
- 3 tbsp apple cider vinegar
- 2 tbsp pure maple syrup
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Whisk together apple cider vinegar, maple syrup, and olive oil in a small jar.
- Place baby spinach in a large salad bowl.
- Drizzle the dressing over the spinach and toss gently to coat.
- Add the sliced Honeycrisp apples and crumbled feta cheese to the bowl.
- Top with candied walnuts.
- Give one final light toss and serve immediately.
