  • 4 medium Yukon Gold or Russet potatoes, diced (about 4 cups)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1/2 tsp paprika

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, brown ground beef until fully cooked; drain excess fat.
  3. Add diced onions and minced garlic to the skillet and sauté until onions are translucent.
  4. In a large bowl, mix the sautéed beef with cream of mushroom soup, sour cream, diced potatoes, salt, pepper, thyme, and paprika until well combined.
