Description

A refreshing, citrus-forward pasta salad featuring tender orzo, zesty lime, and fresh cilantro. Perfect as a chilled side dish for summer gatherings.


Ingredients

  • 1 lb orzo pasta
  • 1/2 cup extra virgin olive oil
  • 1/4 cup fresh lime juice
  • 2 tbsp lime zest
  • 3 cloves garlic, minced
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup red onion, finely diced
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Boil orzo in salted water until al dente, drain and rinse with cold water.
  2. Whisk olive oil, lime juice, lime zest, minced garlic, salt, and pepper in a small bowl.
  3. Place cooled orzo in a large mixing bowl.
  4. Pour the lime dressing over the pasta and toss to coat.
  5. Fold in the diced red onion and chopped cilantro.
  6. Refrigerate for at least one hour before serving.
