- 1 lb orzo pasta
- 1/2 cup extra virgin olive oil
- 1/4 cup fresh lime juice
- 2 tbsp lime zest
- 3 cloves garlic, minced
- 1/2 cup fresh cilantro, chopped
- 1/4 cup red onion, finely diced
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Boil orzo in salted water until al dente, drain and rinse with cold water.
- Whisk olive oil, lime juice, lime zest, minced garlic, salt, and pepper in a small bowl.
- Place cooled orzo in a large mixing bowl.
- Pour the lime dressing over the pasta and toss to coat.
- Fold in the diced red onion and chopped cilantro.
- Refrigerate for at least one hour before serving.
