  • 1 cup bell peppers (mixed colors), thinly sliced
  • 1 cup cucumber, chopped into matchsticks
  • ½ cup green onions, chopped
  • ¼ cup soy sauce
  • 2 tablespoons sesame oil
  • 2 tablespoons rice vinegar
  • ¼ cup cilantro, chopped (optional)

Instructions

  1. Cook ramen noodles according to package instructions. Drain and rinse under cold water; set aside.
  2. Chop bell peppers, cucumber, and green onions. If using cilantro, chop it as well.
  3. In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, and any additional seasonings.
