  • 4 medium zucchinis, sliced lengthwise into 1/8-inch strips
  • 8 oz cream cheese, softened
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded Cheddar cheese
  • 1 cup enchilada sauce (store-bought or homemade)
  • 1/4 cup chopped fresh cilantro
  • 1 cup low-sodium tomato sauce

Instructions
