  • 2 boneless, skinless chicken breasts (about 1 lb)
  • 1/4 cup pure maple syrup
  • 3 tablespoons Dijon mustard
  • 2 medium sweet potatoes (about 1 lb), peeled and cubed
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss cubed sweet potatoes in olive oil, salt, and pepper. Spread on a baking sheet.
  3. Roast sweet potatoes in the preheated oven for 25-30 minutes until tender and golden.

  5. Marinate chicken breasts in half of the marinade for at least 30 minutes.
