  • 34 lbs beef chuck roast
  • 1 can (13.5 oz) full-fat coconut milk
  • 2 tbsp yellow curry powder
  • 2 tbsp fresh ginger, grated
  • 4 garlic cloves, minced
  • 1 large onion, chopped
  • 2 cups low-sodium vegetable broth
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Sear the beef in a large skillet over medium-high heat with 1 tbsp oil until browned on all sides (about 5 minutes per side). Remove and set aside.
  2. In the same skillet, sauté chopped onions until translucent (about 3 minutes). Add minced garlic and grated ginger; cook for another minute.
  3. Stir in coconut milk, vegetable broth, and yellow curry powder until well combined.
  4. Return the seared beef to the skillet, cover, and simmer on low heat for about 3 hours until fork-tender (or use a slow cooker on low for 6 hours).
