A bright Mediterranean zucchini pasta salad that’s light, flavorful, and ready in minutes.
Ingredients

- 3 medium zucchini, spiralized
- 1 cup cherry tomatoes, halved
- 1/2 cup kalamata olives, pitted and sliced
- 1/4 cup fresh basil, chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup feta cheese, crumbled
- 2 tbsp capers, rinsed
- 1/4 cup extra‑virgin olive oil
- Juice of 1 lemon
- 1 tsp Dijon mustard
- 1 garlic clove, minced
- Salt and freshly ground black pepper to taste
Instructions
- Season zucchini noodles with a pinch of salt, rinse and pat dry.
- Combine zucchini, tomatoes, olives, basil, parsley, feta and capers in a large bowl.
- Whisk olive oil, lemon juice, Dijon mustard, garlic, salt and pepper until emulsified.
- Pour dressing over salad and toss gently to coat.
- Taste and adjust seasoning if needed.
- Refrigerate or serve immediately, garnish with fresh basil.
