  • 1 lb Italian sausages (mild or spicy)
  • 2 medium sweet potatoes (about 1 lb), peeled and cubed
  • 2 tbsp extra virgin olive oil
  • 4 garlic cloves, minced
  • 3 tbsp honey
  • 1 tbsp soy sauce
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a bowl, toss sweet potato cubes with olive oil, salt, and pepper. Spread on one side of the prepared baking sheet.
  3. Place sausage links on the other side of the baking sheet.
  4. In a small bowl, whisk together garlic, honey, soy sauce, salt, and pepper for the glaze.
  5. Drizzle half of the glaze over the sausages and sweet potatoes; toss gently. Roast for 25-30 minutes until golden brown.
  6. Remove from oven, drizzle remaining glaze over the dish, garnish with parsley, and serve.
