- 2 medium sweet potatoes (about 1 lb), peeled and cubed
- 2 tbsp extra virgin olive oil
- 4 garlic cloves, minced
- 3 tbsp honey
- 1 tbsp soy sauce
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a bowl, toss sweet potato cubes with olive oil, salt, and pepper. Spread on one side of the prepared baking sheet.
- Place sausage links on the other side of the baking sheet.
- In a small bowl, whisk together garlic, honey, soy sauce, salt, and pepper for the glaze.
- Drizzle half of the glaze over the sausages and sweet potatoes; toss gently. Roast for 25-30 minutes until golden brown.
- Remove from oven, drizzle remaining glaze over the dish, garnish with parsley, and serve.
