- 4 cups day-old cooked rice
- 1 cup pork tenderloin, thinly sliced
- 1 cup carrots, diced
- 1 cup frozen green peas
- 4 green onions, chopped
- 3 tbsp low-sodium soy sauce
- 2 tsp sesame oil
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, grated
Instructions
- Prepare all ingredients: slice pork, dice carrots, chop green onions, and mince garlic and ginger.
- Heat 1 tbsp oil in a skillet over medium-high heat. Add pork and cook for 3-4 minutes until browned; remove and set aside.
- In the same skillet, add garlic and ginger; sauté for 30 seconds. Then add carrots and peas; cook for another 3-4 minutes.
- Return pork to the skillet along with cooked rice, soy sauce, and sesame oil. Stir well to combine.
- Cook everything together for an additional 3-5 minutes until heated through. Adjust seasoning as needed.
