- 8 oz Rotini pasta
- 1 Red bell pepper, diced
- 1 English cucumber, diced
- 1/2 cup Feta cheese, crumbled
- 1/4 cup Red wine vinegar
- 1/3 cup Extra virgin olive oil
- 1 tsp Dried oregano
- Salt and black pepper to taste
Instructions
- Boil rotini in salted water until al dente, then rinse with cold water.
- Dice bell pepper and cucumber into uniform small pieces.
- Whisk together red wine vinegar, olive oil, and oregano.
- Toss the cooled pasta with the dressing in a large bowl.
- Fold in the diced vegetables and crumbled feta cheese.
- Divide the mixture into 4 individual lunchbox cups and seal tightly.
