- 3 cups chicken broth
- 1 pinch saffron threads (optional)
- 1 cup prawns, peeled and deveined
- 1 cup mussels, cleaned
- 1 medium bell pepper, chopped
- 1 cup frozen peas
- 1 teaspoon paprika
- 2 tablespoons olive oil
- Salt to taste
Instructions
- Heat olive oil in a large skillet over medium heat. Sauté the chopped bell pepper until soft.
- Stir in the short-grain rice, paprika, and saffron. Cook for 1-2 minutes until slightly toasted.
- Gradually add the chicken broth while stirring gently. Bring to a simmer, then reduce heat to low without stirring.
- Place prawns and mussels on top of the rice mixture. Cover with a lid or aluminum foil to steam the seafood.
- Cook undisturbed for 15-20 minutes until seafood is cooked through and rice has absorbed all liquid. Add frozen peas during the last few minutes.
