  • 1 cup short-grain rice
  • 3 cups chicken broth
  • 1 pinch saffron threads (optional)
  • 1 cup prawns, peeled and deveined
  • 1 cup mussels, cleaned
  • 1 medium bell pepper, chopped
  • 1 cup frozen peas
  • 1 teaspoon paprika
  • 2 tablespoons olive oil
  • Salt to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté the chopped bell pepper until soft.
  2. Stir in the short-grain rice, paprika, and saffron. Cook for 1-2 minutes until slightly toasted.
  3. Gradually add the chicken broth while stirring gently. Bring to a simmer, then reduce heat to low without stirring.
  4. Place prawns and mussels on top of the rice mixture. Cover with a lid or aluminum foil to steam the seafood.
  5. Cook undisturbed for 15-20 minutes until seafood is cooked through and rice has absorbed all liquid. Add frozen peas during the last few minutes.
