- 4 oz pork belly, diced
- 8 oz shrimp, peeled and deveined

- 2 tsp annatto powder
- 3 tbsp low-sodium soy sauce
- 1 tbsp fish sauce
- 2 cups water
- ½ cup chicharrón (crispy pork skin), crumbled
- 2 hard-boiled eggs, halved
Instructions
- Cook the rice noodles according to package instructions until al dente. Drain and rinse under cold water.
- In a skillet over medium heat, cook diced pork belly until golden brown; remove excess fat but leave some for flavor.
- Sauté minced garlic and chopped onions in the same skillet until fragrant.
- Add annatto powder, soy sauce, fish sauce, and water. Simmer until slightly thickened; then add shrimp and cook until pink.
- Toss cooked rice noodles into the skillet with the sauce mixture until well-coated.
