- 2 medium sweet potatoes (about 500g), peeled and diced
- 4 cups kale (about 120g), chopped
- 3 tablespoons olive oil
- Juice of 1 lemon
- Salt, to taste
- Pepper, to taste
- 1/2 cup nuts (almonds or walnuts), toasted (optional)
Instructions
- Preheat your oven to 425°F (220°C).
- Spread the diced sweet potatoes on a baking sheet lined with parchment paper. Drizzle with 2 tablespoons of olive oil, and season with salt and pepper. Toss to coat.
- Roast sweet potatoes for 25-30 minutes until crispy, stirring halfway through.
- While roasting, massage the chopped kale with a pinch of salt to soften it.
- In a large bowl, combine the roasted sweet potatoes and kale. Drizzle with lemon juice and remaining olive oil. Toss gently and serve.
