- 4 cups shredded zucchini
- 1.5 cups shredded sharp cheddar cheese
- 1/2 cup Greek yogurt or sour cream
- 1/4 cup melted butter
- 1/2 cup breadcrumbs or Panko
- 1/4 cup grated Parmesan cheese
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Shred zucchini and squeeze out excess moisture using a kitchen towel.
- In a bowl, mix Greek yogurt, melted butter, and garlic powder.
- Stir in the squeezed zucchini and half of the cheddar cheese.
- Pour mixture into a greased 9×9 inch baking dish.
- Top with remaining cheddar, parmesan, and breadcrumbs.
- Bake for 30-35 minutes until golden brown and bubbling.
