- 4 large carrots, peeled and grated
- 2 Granny Smith apples, diced
- 3 tbsp fresh lemon juice
- 2 tbsp honey
- 3 tbsp extra virgin olive oil
- 1/4 cup fresh parsley, chopped
- Pinch of salt and black pepper
Instructions
- Grate the carrots using a box grater and place them in a large bowl.
- Dice the apples into small cubes and add them to the carrots.
- In a small separate bowl, whisk together lemon juice, honey, and olive oil until emulsified.
- Pour the dressing over the carrot and apple mixture.
- Gently fold in the chopped fresh parsley.
- Season with a pinch of salt and pepper just before serving.
