- 2 Granny Smith apples, diced
- 1 lemon, juiced
- 2 tbsp honey
- 3 tbsp extra virgin olive oil
- 1/4 cup fresh parsley, chopped
Instructions
- Grate the carrots into a large mixing bowl.
- Dice the apples into small pieces and add to the bowl.
- Whisk together lemon juice, honey, and olive oil in a separate container.
- Pour the dressing over the carrot and apple mixture.
- Fold the ingredients gently to coat everything evenly.
