- 1 lb mixed seafood (shrimp, calamari, scallops)
- 1/2 cup extra virgin olive oil
- 1/4 cup fresh lemon juice
- 3 cloves garlic, minced
- 1/2 cup fresh parsley, chopped
- 2 stalks celery, finely diced
- Salt and black pepper to taste
Instructions
- Poach seafood in simmering salted water for 90 seconds.
- Immediately plunge seafood into an ice bath to cool.
- Whisk together olive oil, lemon juice, and minced garlic.
- Fold the chilled seafood into the lemon vinaigrette.
- Stir in diced celery and chopped parsley.
