Description

A bright, citrus-forward reimagining of the classic Ambrosia salad featuring mandarin oranges, pineapple, and a creamy Greek yogurt base.


Ingredients

  • 2 cups mandarin orange segments, drained
  • 2 cups pineapple tidbits, drained
  • 1 cup mini marshmallows
  • 1/2 cup shredded coconut
  • 1/2 cup maraschino cherries, halved
  • 1 cup plain Greek yogurt
  • 2 tbsp honey

Instructions

  1. Pat the mandarin oranges and pineapple dry with paper towels.
  2. Whisk Greek yogurt and honey together in a large bowl until smooth.
  3. Fold in shredded coconut and mini marshmallows.
  4. Gently fold in the drained citrus segments and pineapple tidbits.
