A modern take on Mexican street corn using the air fryer for a smoky char and creamy finish.
Ingredients

- 4 ears of corn, shucked
- 2 tbsp neutral oil
- 1/4 cup mayonnaise
- 1/2 cup crumbled Cotija cheese
- 1 tsp chili powder
- 1 lime, cut into wedges
Instructions
- Preheat air fryer to 400°F.
- Brush corn with neutral oil.
- Air fry for 12-15 minutes, rotating halfway.
- Apply a layer of mayonnaise to hot corn.
- Roll in crumbled Cotija cheese.
- Dust with chili powder and squeeze fresh lime over the top.
