Description
These Goat Cheese Stuffed Mini Peppers are an easy, colorful Mediterranean inspired appetizer made with creamy goat cheese, fresh herbs and roasted sweet mini peppers. They come together quickly with simple ingredients and make a delicious party snack, holiday started or a snack.

- 2 teaspoons olive oil
- 1/2 teaspoon kosher salt
- 1 pound of mini sweet peppers (seeds removed and cut in half (about 12 peppers))
- 10 ounces goat cheese (room temperature)
- 1 teaspoon dried oregano
- 1 teaspoon fresh thyme
- fresh thyme (for garnish)
- balsamic glaze (for garnish)
Instructions
- Preheat oven to 350 degrees F.
- Wash the sweet peppers and let them dry or pat them dry with a paper towel.
- Cut the peppers in half and remove the seeds. Brush each pepper with olive oil and then sprinkle salt over them. Set aside.
- In a medium bowl mix the goat cheese with the oregano and fresh thyme and mix until combined. Put parchment paper on a baking sheet.
- Use a small spoon to add a small amount of goat cheese to each pepper, enough to fill the pepper cavity. Arrange the stuffed peppers on the baking sheet.
- Recipe Tip: You also can use a piping bag or snip the corner off of a ziplock bag and then add goat cheese into the bag.
- Bake the peppers for 10-15 minutes or until the cheese is tarting to melt and the peppers are just soft.
- Garnish with fresh thyme and balsamic glaze.
