  • 2 large eggs

  • Zest of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Rinse and chop the cauliflower into florets. Steam or microwave until tender (5-7 minutes), then let cool slightly.
  3. Pulse the cooled cauliflower in a food processor until it resembles rice or fine crumbs.
  4. In a mixing bowl, combine the processed cauliflower with cottage cheese, eggs, oregano, garlic powder, lemon zest, salt, and pepper until well mixed.
  5. Transfer the mixture onto the prepared baking sheet and shape it into a round pizza crust about 1/4 inch thick.
